Fat

 Cocoa beans contain approximately 50% fat. The fat is  primarily comprised of two saturated fatty acids;  palmitic and stearic acids, and the mono unsaturated oleic acid. Cocoa butter and chocolate do not raise blood cholesterol. However, when consuming milk chocolate or lower grade chocolate, where a part of the total fat content comes from milk fat or various other types of fat, the cholesterol levels may be adversely affected.

Sugar

The cacao bean contains quite a lot of carbohydrates, but most of it is starch, soluble dietary fibers and insoluble dietary fibers. A very small proportion is simple sugars. Sugar is added during the manufacture of chocolate.

Antioxidants

Cocoa beans contain polyphenols (similar to those found in wine) with antioxidant properties which are beneficial . These compounds are called flavonoids and include catechins, epicatechins, and procyandins. The antioxidant flavinoids are found in the nonfat portions of the cocoa bean. The flavinoids may also reduce the blood's ability to thicken .

Theobromine

Theobromine is a very mild stimulant with a mild diuretic action . Please note that theobromine can be toxic to animals like dogs, cats, parrots and horses.

Caffeine

Cocoa beans contain very low amounts of caffeine , much less than the ones found in coffee, tea and soda .

Phenylethylamine

Phenylethylamine may act as a low-grade antidepressant and stimulant, similar to the body's own dopamine and adrenaline .

Serotonine

Cocoa and chocolate may increase the level of serotonine in the brain. Serotonin levels are often lower in people with depression and those experiencing PMS symptoms.

Cocoa beans are rich in a number of essential minerals;  including magnesium, calcium, iron, zinc, copper, potassium and manganese.

Tocotrienol

 

Tocotrienols are one of two types of vitamin E (along with tocopherol). There are four natural forms known as alpha-, beta-, gamma- and delta. Plant oils;  ]     particularly palm, rice bran, palm kernel and coconuts oils, are rich sources of them , while most vegetables oils contain virtually none.

 The Tocotrienols  are fat-soluble substances with strong antioxidant properties. They are also able to reduce cholesterol levels, fight infections, and boost the immune system.  Tocotrienols For years, many vitamin E supplements contained only alpha-tocopherol because it was believed to be the most potent component of the vitamin. Studies now suggest that Tocotrienols  have significant antioxidant effects compared to Tocopherols, as well as other unique properties. These two families of substances have similar molecular structure, making them strong antioxidants.  However, Tocotrienols may be more useful in lowering cholesterol levels and protecting against cardiovascular disease. The structural difference of the Tocotrienol molecule, particularly that of gamma-tocotrienol, is thought to suppress an enzyme involved in cholesterol production. Its inclusion  may be necessary to obtain the heart-protective benefits of vitamin E.     ..
